Production
This cider is made according to the traditional Champagne method.
The juice first undergoes a chaptalized fermentation in stainless steel tanks, followed by a second fermentation in the bottle. It is aged on its lees for 12 to 18 months. The blend is then adjusted to obtain a dry cider after riddling and disgorging.

Appearance: This cider has a lovely effervescence and is a deep pink colour with orange hues.
Aroma: This aromatic and light cider gives off fruity and floral aromas.Taste: Its abundant effervescence is made up of delicate bubbles. The Geneva apple brings acidity and tannins that provide freshness and astringency. From coming into contact with the yeast, the Geneva's floral profile stands out. Fresh apple flavour follows, supported by a red fruit finish. A touch of sweetness gives this product an incomparable drinkability!
How to enjoy it: This is an excellent substitute for Champagne or other sparkling wines for a festive occasion, and it pairs well with Asian dishes, such as sushi.
