Production
This ice cider is produced through cryo-concentration, i.e., by using the winter cold to freeze the apple juice in January. The water freezes and the residue, highly concentrated in sugar, is fermented in stainless steel tanks, filtered and bottled.
About 100 apples are used per bottle, so this product is produced in limited quantities.
Tasting notes
Appearance: With no effervescence and a syrupy texture, this ice cider is a deep red colour with garnet hues.
Aroma: This aromatic and complex cider gives off aromas of red fruit and candied apple.Taste: Syrupy, velvety and smooth, the Geneva apple has a very expressive red fruit profile, followed by an intense apple flavour from the barley sugar. The Geneva's tart finish provides a lot of freshness, a bit of sweetness, but most of all, the impression that this cider is less sweet than it really is!
How to enjoy it: Excellent as a dessert or paired with cheese, terrines, foie gras, and even a plain cheesecake with dark chocolate coulis.
