Le Temps des Pippins is a corked cider, made using the traditional Champagne method. It is produced in small batches as part of our new Heritage Collection. The juice's initial chaptalized fermentation in stainless steel tanks is followed by a second fermentation in the bottle, aged on its lees for 12 to 18 months. The lees remain trapped inside the bottle, since this corked raw cider is not riddled or disgorged.
Appearance: This cider has a lovely effervescence and is almost translucent.Aroma: This aromatic and delicate cider gives off melon and cucumber aromas.
Taste: Its abundant effervescence is made up of delicate bubbles. The Newtown Pippin variety, one of the oldest apples grown in America, is a large red apple with strong cucumber and melon notes, giving it a nice freshness. With no sugar in this product, a dry finish coats the taste buds!
How to enjoy it: This is an excellent substitute for Champagne or other sparkling wines for a festive occasion, and it pairs well with local charcuteries.
