Our ice cider is obtained by cryo-concentration, meaning the water content of the juice freezes outside in January. It is the very sugary liquid that remains and that is fermented in stainless steel tanks, filtered and bottled.
It requires about 100 apples per bottle, hence, it is a limited quantity product.
Visual : Without bubbles and sirupy, with a strong red colour and garnet gleams.
Nose : Complex and aromatic, this cider provides red berry and candied apple aromas.
Taste : Sweet and voluptuous, the red berry profile of the Geneva is very expressive and is followed by an intense candied apple flavour. A tarte finish provides an appreciated freshness and gives the impression that the product is less sweet than it actually is.
Pairing : Excellent as a dessert, with cheese, pâté, foie gras or a cheesecake with dark chocolate coulis.
