Elaboration
Geneva pas dans le verger sans toi is a corked cider made using the traditional Champagne method. Produced in small batches, it is part of our new artisans' series. An initial chaptalized fermentation of the juice in stainless steel tanks is followed by a second fermentation in the bottle, aged on its lees for up to 12 to 18 months. The lees are still imprisoned inside the bottle, as this corked brut cider has undergone no stirring or riddling or disgorging.
Tasting notes
Color : Attractive effervescence, deep pink with orange highlights.
Olfactory : Aromatic and fine, this cider gives off scents of red fruits (cranberries) and apples.
Gustatory : Abundant effervescence with fine bubbles. Geneva's acidity and tannins give this cider freshness and astringency. Geneva's red fruit profile comes to the fore here, with apple and floral aspects more subdued.
To accompany Excellent on its own as a replacement for Champagne or other sparkling wines at a festive occasion, but especially with sushi, fish and seafood.
